Ray according to this manual put out by the Idaho ham wallet and Game Department on pages 68 & 69 Steelhead fishing is closed in the month of May.

After the ham wallet sits with the dry brine for 12-24 hours, I toss it in the smoker for 2-4 hours. Here it is coming out of the smoker.


Then it goes on the top rack of the grill to finish for 20 minutes at 325 degrees.

In the mean time, drink a beer and watch the game. Then straight from the grill to the vacuum sealer.

Ray, you probably shouldn't grill indoors unless the beer helps with the carbon monoxide poisoning

Looks good Ray. At a party one time a friend of mine brought some fresh caught and smoked salmon. We ate it with cream cheese, crackers, and sweet hots. It was very good. Sweet hots are sweet pickled jalapenos.

I do spend a significant amount of time there. Every time I go on an excursion, I come back and have to re-organize my gear. What I really need is a shop/man cave.

what you need is to sack up and tell the wife the kitchen and laundry room are hers and the rest of the house is yours.

The negative side:
I have to keep my gear in the garage.
The TV in the garage is kinda small.

Expand the garage, add a Wood burning stove and a large screen tv. Then you got it made.

Sheetrock it. Don't mud it or paint it.
Seal and paint the floor.
Flatscreen.
Fridge.
Leather couch.
Do the wife on the couch. Repeatedly.

Ray, could you straighten up that garage a bit for me? It makes my OCD kick in and my left eye is twitching.
